Avocado oil is rich in unsaturated fatty acids, sterols, antioxidants and vitamins. It inhibits the formation of dental plaque and strengthens gums. The high content of sitosterols regulates normal cholesterol levels. Avocado oil inhibits the harmful effects of a polluted environment. The oil can withstand up to 250 °C, so it can also be used for frying and baking. It has a subdued avocado aroma and taste and a deep green color.
